When’s the last time you enjoyed crunchy, flavorful Italian biscotti? Let’s hope it wasn’t too long ago. For me, it was recently when cherry amoretto biscotti turned up as Italian wedding favors at my friend’s distinctly Italian wedding. I had never had a cherry amoretto biscotto before, and I’m a huge fan of both flavors. It was at that moment I realized the true beauty of Italian biscotti.
But first, some history about this divine cookie-and it is basically a cookie. In fact, biscotto is the Italian word for any kind of cookie, and it derives from bis, Latin for twice, and coctum, or baked (which eventually became cotto, or cooked.)
Today’s modern biscotti is most closely associated with Italy’s Tuscan region, but biscotti go way back to ancient Rome, when biscotti were created more for convenience than anything else. Travelers could carry them easily, because they’re light and durable. They’re also delicious and filling, which made them an ideal snack on long journeys. For centuries, the Roman Legions were nourished by biscotti as part of their daily diet.
And they were twice-baked! Unleavened, finger-like wafers were baked, first to cook them, and then a second time to dry them out completely. After the Roman Empire fell, the evolution of biscotti took a back seat to survival, but cooking made a comeback during the Renaissance. When a baker in Tuscany flavored them with almonds, which were plentiful in the region, and served them with locally produced sweet wine, he had a hit on his hands! Dipping the crunchy, dry biscotti in wine became (and still is!) a popular conclusion to a mouthwatering Italian meal.
As decades of incomparable Italian bakers put their own unique spin on the basic recipe, the adoration of biscotti grew. What began as a simple almond recipe in Tuscany grew to include anisette, amaretto and lemon-flavored dough, a greater variety of spices and later, to our great delight, raisins, nuts, dried fruit, chocolate morsels and more! They can be frosted and decorated for weddings and other occasions, but the true beauty of biscotti is the fabulous flavor combinations now available to biscotti lovers everywhere. Here’s a partial list of flavors found in an Amazon.com survey to tantalize you:
Cashew Sesame, Butterscotch, Chocolate Cherry Amaretto (heaven in your hand!), Chocolate Macadamia, Cinnamon Almond, Apricot Hazelnut, Chocolate Pistachio, Coffee Cashew, Spumoni, Lemon Blueberry, Maple Praline, Gingerbread, Cranberry Orange, Peanut, Pistachio Rum (Yum!), Coconut Chocolate Chunk, Chocolate Tiramisu, Cinnamon Pecan, Irish Cream Pistachio, Cappuccino, Mint Almond.
And that’s a partial list! Usually found in a 3″ size-small, perhaps, but those 3″ are packed with powerful pleasure. Pour yourself a glass of sweet wine and enjoy one now!
