When’s the last time you enjoyed crunchy, flavorful Italian biscotti? Let’s hope it wasn’t too long ago. And they were twice-baked! Unleavened, finger-like wafers were baked, first to cook them, and then a second time to dry them out completely. After the Roman Empire fell, the evolution of biscotti took a back seat to survival, but cooking made a comeback during the Renaissance. When a baker in Tuscany flavored them with almonds, which were plentiful in the region, and served them with locally produced sweet wine, he had a hit on his hands! Dipping the crunchy, dry biscotti in wine became (and still is!) a popular conclusion to a mouthwatering Italian meal.
As decades of incomparable Italian bakers put their own unique spin on the basic recipe, the adoration of biscotti grew. What began as a simple almond recipe in Tuscany grew to include anisette, amaretto and lemon-flavored dough, a greater variety of spices and later, to our great delight, raisins, nuts, dried fruit, chocolate morsels and more! They can be frosted and decorated for weddings and other occasions, but the true beauty of biscotti is the fabulous flavor combinations now available to biscotti lovers everywhere.
